Cold Brown Rice & Vegetable Dish

Cooked brown rice
red onion
lemon
lime
sweet pepper
ripe mango
chicken breast & fresh herbs
Cook the brown rice and let it cool in the refrigerator (

Chop all vegetables & mango into small cubes. Slice cooked chicken.
Mix vegetables together, adding lemon & lime juice (amounts of juice may be adjusted according to the amount of rice you have)
Mix the rice & vegetables thoroughly
Place chicken slices on top of the mixture & serve cold
